Sicily-Style Rice


  • 400 gr. rice
  • ½ jar black olive paste
  • ½ cup white wine
  • 1 cup extra virgin olive oil
  • 1 teaspoon white wine vinegar
  • juice of 3 lemons
  • 1 finely chopped onion
  • 1 teaspoon anchovy paste
  • 1 teaspoon mustard
  • 300 gr. tomato cut into cubes
  • 1 teaspoon marjoram
  • salt and pepper


  1. Mix the tomatoes, marjoram, black olive paste and ¾ of the oil in a bowl
  2. Cook the rice in plenty of salted water
  3. Meanwhile, fry the onion in the remaining oil, add the vinegar and, when it is evaporated, add the wine, mustard, anchovy paste and lemon juice
  4. Leave the mixture on the turned off stove
  5. When the rice is cooked al dente, mix in the sauce, stir well and then add the tomato.
