Pesto endives


  • 300 gr. endives
  • 2 apples
  • juice of ½ lemon
  • 2 tablespoons pine nuts
  • 2 tablespoons extra virgin olive oil
  • 2 Genovese pesto sauce, salt


  1. Chop the endives.
  2. Peel the apples, dice or slice and straight away pass them through lemon juice to keep them from browning.
  3. Dilute the pesto with extra virgin olive oil.
  4. Mix the endives with apples and pine nuts
  5. Add salt and drizzle with the pesto sauce
