Pumpkin Ravioli and Arugula Sauce


300 gr of flour
3 eggs
½ kg of yellow pumpkin
200 gr of ricotta
1 vasetto di arugula sauce
Parmesan cheese q.b.
butter q.b.
1 onion
salt & pepper



Mix the flour with the eggs and salt and knead. When the dough is ready think about the filling.

Cut the pumpkin into cubes and cook it until it is very soft, together with the finely chopped shallot.

Cool it down and combine it with the Parmesan, ricotta and a little salt and pepper in a bowl

Stuff the pasta with this mixture and cut it giving them the classic ravioli shape.

Cook the ravioli in boiling salted water.

Pour the Fattorie Umbre rocket sauce into a pan and lengthen it with a little cooking water

At this point add the cooked ravioli, stir everything and serve hot
