Rice Salad

Ingredients

  • 400 gr. rice
  • 100 gr. tuna
  • 3 diced hard boiled eggs
  • 1/3 jar olive and almond paste
  • 1 chopped ripe tomato
  • 1 chopped red bell pepper
  • 2 tablespoons capers
  • desalted and chopped
  • 1 cup extra virgin olive oil
  • salt and pepper to taste.

Directions

  1. Cook the rice in plenty of salted water, drain it al dente and cool immediately under cold water.
  2. In a separate bowl, season the rice with the rest of the ingredients and serve.
